Tuna Noodle Bowl



Fresh and light - perfect for summer and your waist line!

Ingredients

  • 1 Large can of tuna packed in water
  • 2 cups whole wheat Ditalini Pasta - or whatever shape you like
  • 1/2 small yellow onion, minced
  • 10 hardboiled egges (toss out at least 5 yolks)
  • 2/3 cup Reduced Fat Extra Virgin Olive Oil Mayo
  • Salt
  • Pepper


  • Cook eggs, peel and throw at least half the yolks out (this is where the fat is), coarsely chop. Cook pasta according to directions. Drain and rinse with cold water to stop the cooking process. Chop onion and bell pepper. Combine all into a large mixing bowl and add mayo, salt and pepper.
