CHICKEN WALDORF SALAD



Crisp apples, tender chicken and a kick of flavor to keep you coming back for more.  This is my throw on a good ol' Focus T25 Recipe and my family loves it!

Ingredients

  • 3 Baked Chicken Breasts - seasoned with sea salt
  • 2 Granny Smith Apples - Chopped 
  • 1-2 cups red grapes - halved
  • 1/2 cup chopped black walnuts
Vinaigrette-
  • 1/3 cup OJ (the good stuff)
  • 2 Tbls EVOO
  • 2 Tbls Apple Cider Vinegar
  • 2 Tbls Raw Honey
  • 2-3 Tbls Dijon Mustard
Bake chicken and chop, set aside and let cool completely. Chop apples and place in a bowl with a few TBS of lemon and enough water to cover the apples, set aside.  Halve grapes and throw them in with your apples.  In a separate bowl mix OJ, EVOO, and Vinegar.  Drain all the lemon water off your fruit mixture. Add chicken and walnuts and toss in vinaigrette.
